On arrival in cellar the grape harvest is cooled. The pressing is made in a pneumatic press, Willmes of 240HL, allowing a delicate extraction.
The alcoholic fermentation lasts approximately 4 week in regulated temperature (16 in 18°c).
The malolactic fermentation is not made.
The light yellow with very light green reflection of the dress indents on aromas in the dominants of scrubland, hay, ripe(mature) pear.
The mouth shows itself round and aromatic (butter, apricot, pepper) in pleasant finale raised(found) by an attractive slightly acid freshness.
