Vinification, Isle Saint Pierre, vin de Pays des Bouches-du-Rhône
This rosé wine is a blend of ‘saignée’ and directly pressed wines.
To obtain a fresh wine with a strong and vivid colour a special care is given to the pre-fermented maceration in the elaboration of both types of wine according to the different grape varieties used in its production.
The slow fermentation lasts about four weeks at a stable temperature (16 to 18°)
There is no malolactic fermentation.
