Chardonnay - Vin de France
Upon arrival to the cellar the harvest is first cooled. The pressing is performed in a high volume pneumatic press, followed by a delicate extraction and a pre-fermented maceration for some specific grape varieties.
Alcoholic fermentation lasts about 4 weeks and its temperature is permanently monitored.
There is no malolactic fermentation.
